Orange Cinnamon Madeleines

Love the scallop shell shaped madeleine pan - and how it matches our Coquilles cocktail napkins

INGREDIENTS:

  • 3 eggs
  • 2/3 cup sugar
  • 1 t cinnamon
  • 1/2 t orange powder
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 t salt
  • 6 tbsp melted butter

DIRECTIONS:

  • Beat eggs and sugar until the mixture is pale yellow
  • Mix in dry ingredients
  • Pour in melted butter
  • Refrigerate (at least 1 hour, at most 2 days)
  • when ready to bake …
  • Preheat oven to 350F
  • Coat a madeleine pan with baking spray
  • Spoon 1T batter into each cavity
  • Bake 8-10 minutes until golden brown and cake tester comes out clean
  • (Optional: sprinkle with confectioner’s sugar)
  • Serve.

Makes 15 madeleines. 20 minutes active time, 3 hours total time.
