Southern Carrot Slaw
A refreshing salad perfect for a picnic, appetizer or a snack on-the-go!
- 1 pound carrots, peeled and spiralized
- 3 T extra virgin olive oil
- 1 t lemon zest
- 2 T freshly squeezed lemon juice
- 2 T freshly squeezed orange juice
- 2 T honey
- 1/2 cup dried cranberries
- 1/2 cup walnuts, toasted
- 3 T freshly chopped parsley
- 1/2 t salt
- 1/4 t black pepper
- 1 t cinnamon
- In a large bowl, toss together all of the ingredients.
- Season the salad with salt and pepper to taste.
- Serve cold. Enjoy!
