5 Ideas for Stress Baking
When life gives you lemons, make lemon meringue pie? Lemon bars? Lemon sorbet? All of it. And then more. As I stay low-key the next 2 weeks, here are 5 things I'll definitely be baking.
1. Italian Rainbow Cookies
Bet you've never made these before! Making Italian Rainbow cookies at home means you can choose what colors to use. Chefmaster has the widest range of food coloring options; see here.
2. Apple Galette
This is a no-recipe dessert recipe ... on pie dough (store-bought or homemade, no judgment), lay the slices of 3-ish apples. Sprinkle with mixture of 3 tablespoons brown sugar, 1 teaspoon ground cinnamon, 1/2 teaspoon kosher salt, and 2 teaspoons of lemon juice. Bake at 400 Fahrenheit for about 45 minutes or until crust is golden brown.
3. Marzipan Challah
My favorite baked good in the whole world. We use The New York Times challah recipe like real New Yorkers. In the center of your dough strands combine a mixture of almond paste (approximately 7 ounces) and softened butter (1/2 stick). Braid the challah as normal. Brush with egg. Sprinkle with black sesame seeds. Bake, and go to shabbos heaven.
4. Penis Cookies
We all need a little levity to get through a quarantine. Use our sugar cookie recipe and a penis-shaped cookie cutter to make these phallic treats. Icing was a combination of confectioner's sugar, whole milk, and food dye - can't give exact quantities because you must eyeball based on how much liquid food dye you're using; a little goes a long way.
5. Chocolate Chip Cookies -- with Truffle Salt
This is my tried-and-true cookie recipe - a signature at my catered dinners. With a pinch of truffle salt, it is an umami experience of luxury.
