Charoset Cake

Charoset Apple Cake Kosher for Passover

Charoset -- a mixture of apples and nuts that represents the mortar that the Jewish people used to build the pyramids when slaves in Egypt -- has tremendous symbolic significance on the Passover seder plate. This cake incorporates the delicious paste in a dessert that is kosher for Passover. 

INGREDIENTS: 

  • 1 cup sugar
  • 3//4 cups olive oil
  • 3 eggs
  • 3 cups almond flour
  • 2 teaspoons cinnamon
  • 2 teaspoons salt
  • 2 large honeycrisp apples, chopped into 1/2 inch pieces. 
  • 1/2 cup chopped almonds
  • 3 tablespoons honey
  • 2 tablespoons potato starch

DIRECTIONS:

  • Preheat the oven to 350F
  • Spray a 9 inch cake pan with Canola oil
  • In a mixing bowl, combine the apples, almonds, honey, and potato starch. Allow to sit until liquid is released from apples. 
  • In a separate bowl (maybe a stand mixer??), combine sugar and oil until consistent cream is formed. Gradually add eggs until fully incorporated. Then, flour, cinnamon, and salt until batter is achieved. 
  • Pour half of the batter into the cake pan. Then spread a layer of the apple mixture (leaving the liquid in the bottom of the bowl). Add remaining batter to the cake pan, and top with another layer of the apple mixture. 
  • Bake for 45-60 minutes until the cake is cooked through.
