Orange Cinnamon Madeleines
Love the scallop shell shaped madeleine pan - and how it matches our Coquilles cocktail napkins.
INGREDIENTS:
- 3 eggs
- 2/3 cup sugar
- 1 t cinnamon
- 1/2 t orange powder
- 1 cup flour
- 1 tsp baking powder
- 1/2 t salt
- 6 tbsp melted butter
DIRECTIONS:
- Beat eggs and sugar until the mixture is pale yellow
- Mix in dry ingredients
- Pour in melted butter
- Refrigerate (at least 1 hour, at most 2 days)
- when ready to bake …
- Preheat oven to 350F
- Coat a madeleine pan with baking spray
- Spoon 1T batter into each cavity
- Bake 8-10 minutes until golden brown and cake tester comes out clean
- (Optional: sprinkle with confectioner’s sugar)
- Serve.
Makes 15 madeleines. 20 minutes active time, 3 hours total time.
