Patriotic Quilt Cookies

We use our classic sugar cookie recipe for a new quilt-inspired cookie. Video for assembly here.

INGREDIENTS:

  • 1 ½ tsp salt
  • ½ tsp baking powder
  • 3 cups flour (additional for rolling)
  • 2 ½ sticks butter, soft (cut into ½ inch pieces)
  • 1 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 2 tsp red food coloring (more if needed)
  • 2 tsp blue food coloring (more if needed)

DIRECTIONS:

  • Preheat oven to 325F
  • In a medium bow, combine salt, baking powder, and flour.
  • In a large bowl, beat together butter and sugar until creamed.
  • Mix egg, egg yolk and vanilla into butter-sugar mixture.
  • Slowly add dry ingredients to wet ingredients. Mix until combined. 
  • Divide dough into 3 equal portions and set one aside.
  • To one portion, add blue food coloring and mix. To the other portion, mix 2 tsp of red food coloring. Adjust the food coloring to your desired shade.
  • Tightly wrap and chill the 3 dough balls for at least 30 minutes.
  • Once firm, roll out one portion of dough to about ⅛” thick, then cut into ¾” squares and chill again. Repeat with each portion of dough.
  • On a parchment lined baking sheet, assemble the small squares 3x3 cookies in whatever patterns you desire. Cut some of the squares into triangles, or add other small shapes (hearts, stars, etc.) to the squares if you want to diversify your patterns.
  • Bake cookies for 20 minutes or until cookies no longer wet/ shiny.
  • Allow to cool. Serve immediately or store in an air-tight container for up to 4 days.
