Artichoke Frittata in a Mug
Easy single serving artichoke breakfast - made in under 5 minutes. Only clean-up is the mug itself!
INGREDIENTS:
- 2 eggs
- 1/2 t salt
- 1 T pecorino romano
- 1 cooked artichoke, chopped into bite-size pieces (I use Sogno Toscano's Canned Artichokes)
DIRECTIONS:
- In a mug, whisk eggs with salt
- Mix in cheese and then artichoke
- Microwave for 2.5 minutes
- Serve
Serves 1. Active time 2 minutes, total time 5 minutes.
