Artichoke Frittata in a Mug

Easy single serving artichoke breakfast - made in under 5 minutes. Only clean-up is the mug itself!

INGREDIENTS: 

  • 2 eggs 
  • 1/2 t salt 
  • 1 T pecorino romano
  • 1 cooked artichoke, chopped into bite-size pieces (I use Sogno Toscano's Canned Artichokes)

DIRECTIONS: 

  • In a mug, whisk eggs with salt 
  • Mix in cheese and then artichoke 
  • Microwave for 2.5 minutes 
  • Serve

Serves 1. Active time 2 minutes, total time 5 minutes.
